Tex/Mex
The term Tex/Mex was first used in the 1940's, but Tex/Mex cuisine has a history hundreds of years old created through a delicious blend of Texan and Mexican cooking. Essentially, Tex/Mex stems from traditional peasant fare of northern Mexico as prepared in cowboy fashion on cattle ranches during the days of American immigration into the then Mexican province of Texas in the early 1800's. Cowboys used Tex-Mex salsa to spice up their rather bland diet of beef and hardtack biscuits.
This unique blend of culture and cuisine was centered on San Antonio, which is best known for the historic battle at the Alamo in 1836 during the war for Texas independence. To this day, San Antonio remains the center for authentic Tex/Mex cuisine and the best salsa in the world.
