Ingredients
  • 2 tablespoons fresh limejuice
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 8 8 inch bamboo skewers
  • Your choice of Bandana Bandito Mango, Peach or Pineapple Salsa
  • 2 tablespoons chopped macadamia nuts - lightly toasted
  • 2 tablespoons honey and a pinch cayenne pepper
  • 12-16 large sea scallops (1 1/2 pounds)
Preparation Instructions In a medium bowl, whisk together lime juice, honey, oil, cayenne pepper and salt. Add the scallops and gently toss, coating well. Cover and marinate in the refrigerator at least 2 hours or overnight.
Cooking Instructions Heat the grill to medium to hot. Double skewer the scallops using 3-4 per serving by threading on 2 parallel skewers about 1 inch apart. Put the scallop skewers onto hot grill and cook until nicely marked - about 1-2 minutes. Turn and continue cooking until scallops are just cooked and still very juicy (about 1 minute longer).
Serving Instructions Arrange on individual plates. Top with salsa (to taste) and sprinkle with macadamia nuts.
